Marinade with salt and pepper  for about an hour or overnight 

High heat 250C for 15 mins each side and then reduce heat to 150 for 30 mins.

Let it rest for 30 mins before serving 

Sauce : 

Sautéed onions and garlic, add bay leaf, worchester sauce, balsamico, sugar, salt and pepper. Add stock. Mix in red wine (optional) add flour to thicken. Taste and adjust desire flavour.
