Pan fry chicken until skin is brown. Set side. Pan fry bacon, set aside. Then sautéed onions, garlic, mushroom and red pepper until brown and bacon back in. Add thyme and bay leaf. (and rosemary optional) pour in red wine and some stocks. Salt and pepper. Bring to boil, chicken back in (skin side up) and bake at 180C for 1 hour, in a baking tray.  Remove chicken and set aside. Remove sauce from tray and transfer into a sauce pan. Heat and add some plain flour to thicken. Reduce and taste.
